I made this cocktail as a halloween special. It’s the best keto / lowcarb alternative to wine that i’ve come across. It’s a fun drink irrespective of the ultra low carb count. Can even be made into a mocktail. So Enjoy.

Ingredients:
Hibiscus Tea – I used The India Chai Company.
Vanilla extract – I used homemade vanilla vodka extract made from these pods. If you don’t want liquor use this or this brand. You can also use vanilla favoured vodka.
SweetnerΒ – I use liquid sweetner – monkfruit and stevia. Check the keto essentials page here.
Lemon or Lime or Lemon Extract – I used homemade lemon extract with zest. A fresh lime will do.
Water – Still or Sparkling
Salt to taste
Vodka or any hard liquor (optional but highly recommended).
Keto friendly Berries – I used cranberries and raspberries (optional but highly recommended).
Recipe:
This recipe makes 250ml of concentrate which can be diluted to about 750-1000ml of keto wine.
1) Quickly rinse 20g of hibiscus tea (to get rid of debris) and add 200 ml of boiling hot water to it. It’s best to get the herbal tea with just hibiscus leaves and without the green or black tea blend.
2) Let it steep for 5 minutes. Around the 2 minute mark add lemon zest and lemon extract. If you’re using fresh lime juice save it for step 8.
3) Once the tea has steeped, strain it into a bottle.
4) Optional but highly recommended: At this stage you can blend some berries with a little water and add it to tea. For best flavour use 20g cranberry 10g raspberry and 5g cherries. Fit it to your macros.
5) Once the liquid has cooled, add the vanilla extract – I add about 30ml of vanilla vodka extract. The vanilla extract is what will give this cocktail a wine like taste. I use homemade vanilla vodka extract made from these pods. You can also use vanilla flavoured vodka (check for carbs). If you don’t drink liquor – use vanilla essence or vanilla glycerine extract. You’ll need to adjust the amount as per taste. Glycerine extracts generally are stronger than vodka based extracts.
6) Next it’s time to sweeten the drink. If you’re using liquid sweetener. Just add as per taste. If you’re using powdered sweetener – make a simple syrup (boil the powdered sweetener and stir it well with water). Don’t make this drink too sweet.
7) Add some salt and give it a good mix. I add generous amounts of salt, since its a sour drink. Taste the concentrate and adjust as per taste. If it doesn’t taste nice now it wont taste nice when diluted. It should taste – sour, sweet and wine like.
8) To serve. Just add the decoction to some water, soda, sparkling water etc. Add vodka or other hard liquor as per requirement. I recommend serving this drink light red and make the vodka smooth. If you’re using fresh lime – do so now. The drink looks redder in the picture due to lights.
9) For sangria cut and garnish with some berries. For sparkling wine champagne Add some club soda or sparkling water to it.
